Some distilleries redistill through a simple boiling process where the botanicals are added to neutral spirit and purified water in a traditional copper pot still and heated gently until boiling temperature is reached. Sometime the botanicals are steeped in a pot still with the base spirit for before distilling. Or there's the racking method. Here the base spirit is put into a traditional pot still which has a long rectifying column attached. The botanicals are placed in baskets in a copper container at the furthest point of the still's neck. The spirit passes slowly through the baskets as a vapour, picking up the different flavours of the botanicals mix so it's more like steaming.
