Most gin stills are copper pot stills with high swan necks to help extract the higher, more fragrant elements of the spirit. At many distilleries original pot-stills are carefully preserved and copied even to the extent of reproducing 200 year old dents. Why this fuss about stills? Because the shape of the still affects the flavour of the gin and ensures consistency of quality over time. It's as simple as that.
