The first and last parts of the run through the stills are discarded because they contain unwanted flavours - oily or off, too strong, too weak. Judging when to make ‘the middle cut', as it is called, is critical. No two gin makers will cut at exactly the same time or at exactly the same strength. That decision is part of the recipe and remains a secret known only to the experts.
